Between 12 and 30 hours for most loads, and the range is that wide because it depends on the food, the thickness, the quantity and whether you pre-froze it. Manufacturers publish 12 to 20 hours (Blue Alpine) and 16 to 30 hours for 8 lb (Stay Fresh) — both quoted against partial loads.

Read those figures carefully, because the small print matters. Blue Alpine’s 12 to 20 hours sits alongside a separate statement that 10 lb is a normal 24-hour run — so the fast end of the range is not a full load. Stay Fresh is more transparent, stating its range specifically against 8 lb when the machine takes 12 to 18 lb.
The five things that change it
- Slice thickness. The biggest single factor. Vapour has to travel out of the piece, and doubling the thickness more than doubles the time. 12 to 15 mm is the working range.
- Water content. Watermelon is mostly water; cooked rice is not. High-moisture food loads the cold trap and takes far longer.
- Load quantity. A full tray set takes longer than a half set, though not proportionally — the compressor is cooling the same chamber either way.
- Pre-freezing. Loading pre-frozen food lets the machine skip most of the freeze-down phase. This is the easiest hours you will ever save.
- Room temperature. A machine in a hot garage works harder to hold chamber temperature and runs longer.

When it takes much longer than it should
If a cycle that used to take 18 hours starts taking 30, something has changed and it is usually one of three things: the pump oil is saturated, the door gasket has developed a leak, or you have quietly started loading trays thicker than you used to. Check them in that order.
Do not chase the fast figure
A 20-hour cycle that finishes properly beats a 12-hour cycle you stopped early. The published minimum is a best case on a light load, not a target to hit. Trust the weight test, not the clock.
