Yes, with dry ice, and it works genuinely well for small quantities. No, not with a household freezer alone, whatever you have read — that produces freezer-burned food, not freeze-dried food. And the dry ice method costs enough per batch that a machine pays for itself faster than you would think.
The dry ice method, which does work
Pack food in a container, surround it with dry ice, and leave it. Dry ice at −78°C sublimates from solid straight to gas, and in doing so it both freezes the food hard and creates a dry, CO2-rich environment at slightly raised pressure. Water in the food then sublimates too.
- Prepare and slice as you would for a machine. Thin and even.
- Bag the food loosely in a freezer bag, left open or pricked, so vapour can escape.
- Layer in a cooler with roughly equal weight of dry ice to food, food bags between dry ice layers.
- Leave the lid resting, not sealed. This matters — sublimating CO2 builds pressure and a sealed cooler can burst.
- Wait 24 hours, then check. Fully dried food snaps rather than bends.
- Seal immediately in mylar with an absorber.
What it costs, honestly
Dry ice runs roughly $1 to $3 per pound depending on where you buy it, and you need roughly a pound of dry ice per pound of food. So a 10 lb batch costs $10 to $30 in dry ice alone — against about $6 of electricity on a machine.
Run that forward. At 40 batches a year the dry ice method costs $400 to $1,200 annually against roughly $240 of electricity, and the difference does not buy you a machine but it closes the gap considerably faster than people expect. If you are drying regularly, the machine is the cheaper method.
Where it genuinely makes sense
- Trying it before you commit. One dry ice batch tells you whether you like the results for $20.
- Occasional small batches. A few times a year, no storage space for an appliance.
- Foods you want to test before dedicating a machine cycle to them.
The freezer method, which does not work
You will find instructions saying to leave food uncovered in a deep freezer for a week or two. What actually happens is freezer burn: some surface moisture sublimates, the food dries unevenly, and the result is neither shelf-stable nor pleasant. Residual moisture stays far above the 3% you need, so it will not store.
It is not dangerous, it just is not freeze drying. If someone tells you their chest freezer makes freeze-dried food, they have made something else.
Safety with dry ice
- Gloves always. −78°C causes contact burns in seconds.
- Ventilated space. CO2 displaces oxygen and it pools low. Never in a small closed room.
- Never seal the container. Sublimating CO2 builds pressure and containers can rupture.
- Not in a car cabin. Transport it in a boot or open bed.
