How to freeze dry candy: what works and what comes out chewy

Skittles, taffy and Jolly Ranchers puff dramatically and turn crunchy. Chocolate and gelatine gummies do not. Silicone mats are essential.

Candy freeze dries fast and dramatically: trapped air and moisture expand under vacuum, so the piece puffs up several times its size and turns crunchy. Skittles, Salt Water Taffy and Jolly Ranchers work beautifully. Chocolate, gummy bears with gelatine and anything mostly fat do not.

Why it puffs

Candy contains small amounts of trapped water and air. Under vacuum, that trapped moisture sublimates and the gas expands, and because the sugar matrix is soft enough to deform but rigid enough to hold a shape once dried, the piece inflates and stays inflated. That is the whole trick, and it is why texture rather than flavour is the point.

How to run a candy batch

  1. Silicone mats are essential. Not optional. Candy sticks to bare stainless and you will lose the batch prising it off.
  2. Single layer, spaced out. Pieces expand to several times their size and will fuse into one sheet if they touch.
  3. Do not pre-freeze. Unusually for freeze drying, candy does better loaded at room temperature – pre-freezing can crack the sugar.
  4. Run a shorter cycle. Candy has far less water than food. 8 to 16 hours is typical rather than 20 to 30.
  5. Check early. Over-running candy makes it fragile to the point of powdering.
  6. Seal immediately. Freeze-dried candy is intensely hygroscopic and goes sticky within minutes in humid air.

Storage is shorter than you expect

Freeze-dried candy is not a 25-year food. It is extremely hygroscopic, and any moisture that reaches it turns the crisp texture back to chewy immediately. Sealed in mylar with an absorber it keeps its texture for months to a couple of years; opened, it needs eating within days.

The business angle, briefly

Freeze-dried candy has been the biggest driver of home freeze dryer sales in recent years, and a lot of small businesses started on it.
